I look for luxury. I like to be pampered when at a hotel, so I look to see if it has a spa, a gym, massage treatments, top class restaurants, etc.
The price isn't a problem, as long as it's luxurious.

I would choose Luxor but perhaps you can get also MGM or Mandalay? These hotels are really great IMO. I would also consider to book air and hotel seperately. In my experience you get a better price then. For air I recommend to check kayak.com and http://www.vegas-hotels-online.com has some really good promotion codes offers.

A hotel right on the water is always a good idea to really live the atmosphere in Venice. January can be cold and misty but I like Venice in January. It seems so mysterious and evocative – just the way Venice should be. It is also far less crowded. To really get the most out of Venice you need to walk a fair bit exploring all the little streets and squares.

Quite the proposition there.
Like all real-estate-related businesses, hotel management is highly dependent upon location. The town in which I live has a major tourist attraction that draws people from NYC, so room rates are two to three times as high as anywhere within 50 miles. It also has a Fortune 500 company headquartered in town, so we get a fair amount of business travelers. If you can get a property near one or both of those things, you're going to do a lot better than some random interstate exit.
Amenities are kind of a base value for what you can expect to charge for a room, with nicer hotels obviously charging more than more spartan ones. But your location kind of serves as a multiplier to that base value. The hotel at which I worked charged more than twice what was usual for a hotel in its chain, but only a bit more than slightly lesser equipped properties in the area due to the high demand for lodging. Go somewhere dumpy enough and even three and four star hotels are cheap. Budget property or no, there's no demand for lodging of any kind unless there's something to do in the area.
Trade secrets? Your staff will make or break the place, and it's <i>hard</i> to get good help these days. I'd plan on hiring a hotel manager rather than doing everything yourself. Check his employment history and previous properties. See how they did. Leave it to him to staff the hotel or you'll go nuts.
Controlling costs? Most of your costs will be pretty fixed. You'll pay taxes (especially property taxes). You'll pay for utilities. You'll pay for staff. Staff is the one area with a little play, but don't skimp here. You get what you pay for. Then again, if you're running a budget place and don't really care about guest satisfaction, maybe you can get away with less.
If you're going after the budget tourist crowd, it's all about price. Amenities are of some advantage, but if someone is looking to spend less than $50 on a room, they can't afford to be too picky. If you're going after the business traveler and upscale tourist crowd, amenities are where it's at. Free wireless, fridges/coffee pots in the room, etc. Everyone wants a pool, so get one. But you really need to figure out what kind of traveler you want to attract.
I guess the big trade secret is that hotels tend to be quite profitable if you can stay reasonably full. We're talking 20-45% profit margins. You'll only get the higher profits if you have a well-run property in a tourist area, but it's certainly doable.
In terms of buying or building: if you can find a local hotel management company that runs a decent operation, consider building a property from scratch. The problem with buying an existing property is that owners aren't likely to want to sell a reliably profitable property. If you see a hotel on the market, asking what's wrong with it is a good idea.

Southwest Airlines and Midway Airport is the winning combo.
As for hotels, yes downtown properties are expensive. And, they are often deceptively so because of all the add-ons that pad the bill, like wifi-internet, parking, etc. They advertise online $139, but you end up walking with a bill over $200/night.
I prefer to stay near Midway, as someone else mentioned. For $109-129 you can get a great room at the Carlton Inn Midway http://www.carltoninnmidway.com/ You need to call them to make reservations, they aren't a part of priceline or expedia. They are an independent hotel, and are really, really friendly.
They are close to the CTA elevated train- the L- which takes you just 15-20 minutes to get anywhere downtown. And, their free shuttle picks you up at the airport. (Warning: No other Midway hotel is a short walk to the L. They usually require a shuttle to get to the L, which wastes lots of time).
A youth hostel http://hichicago.org/ is really nice, and downtown. And for around $30/night it is affordable. But between the hostel and the Carlton, the options aren't so clean and pretty.

I don't recommend a package deal. There's so much to do in Branson, I'd hate to be on a schedule because I'd booked it. I recommend the Marriott for a hotel. It's right off the strip & is quiet & obviously name brand. We've always gotten a room for $60/night. Stick with the name brand hotels and you'll be good. If you're wanting to know what's best to see & do, I recommend Silver Dollar City, Shopping (plan for a day of this) at outlets & touristy shops, see the Titanic, head to Branson Landing. If you're looking for good shows, the Showboat Branson Belle is a great experience that includes food. McFarlin's in the IMAX is a great place to eat. We usually to to Branson 2 times each year. It's a great place with lots to do. Just do your research before you go & I really don't think you need a package deal.
